Trokay has moved the needle off the steak-with-a-view paradigm that has long ruled the fine dining scene in Tahoe. The only view here is onto the main drag of Truckee, Calif., but the meal itself does double duty as a bit of theater. A cloche lifted on a dish called Fire & Smoke releases a puff from tiny vegetable-ash cinders served with trout. And chef John Weatherson himself brings out two Hawaiian prawns to sizzle them for you on a hot slab of granite pried from nearby Desolation Wilderness—this is big-city cooking with a distinctly Tahoe twist.

Few professional surfers have the ability to transcend the surf industry and create true mainstream appeal. Kelly Slater is the obvious exception, while Mick Fanning, with his recent brush with a shark and tragic death of his brother, has also entered the public consciousness.
Girl surfers, however, tend to have a wider appeal. Their mix of surf talent, athleticism and social media savviness has been helping their cause. Of course, if we’re to be honest, a well-toned butt doesn’t hurt either.
